Built of carbon steel in Wisconsin, Brent Firkser’s Kickstarter-funded GOSO frying pans can take a beating, work on all cooktop types (from induction to campfire), are non-toxic, and are lighter than cast iron. At 2.6 pounds, the 10-inch pan weighs the same as the stainless steel home kitchen pan it replaces. The two-pan set comes with Bee Grease seasoning paste (a blend of beeswax, grapeseed oil, and sunflower oil) and a full-grain leather scratch pad. Crafted in Nelson, British Columbia, the pad protects the nested pans from travel abuse and works great as a pot holder. Checked for strength via finite element analysis, the BigBite removable anodized aluminum handle has an infinite fatigue life based on its intended usage—neat.
Upon first use, Köfte (Turkish meatballs) cooked sans cooking oil left almost no residue, and the seasoning continued to build up over time. I fried up some crispy garlic chili butter eggs, my arch nemesis when it comes to cleaning, and enjoyed the results while suspiciously eyeing the cooling pan. A few ceremonious wipes with fresh sourdough wiped most of the residue cleanly away, and a single light-duty paper towel finished the job. Simmering acidic items (such as tomatoes) can (and did) deteriorate the seasoning, requiring a fresh start. I am now impatiently waiting for a lid and matching saucepan to match my favorite frying pans to date.
