Would love to do a slightly larger cube on a Fuso chassis... With spares mounted behind the cab and cab roof storage rack.

Here is a larger cube under construction for a Unimog:

I am not involved in the day to day operations so I can't give you a definite answer, but I did see 3 or 4 V2 campers at various stages of construction during my last visit in August. There were also at least 2 Tacomas in the shop getting work done prior to the camper installation, including a diesel powered Taco.

It would be great to see some pics of the final interior.

The website now has some info on the new V3 XPCamper:

I doubt that XPCamper would spend the time and money to make new V1 molds for such a slight reduction in length.

I understand exactly how you feel. A lot of people are impatiently waiting for the V3. Marc has already had people try to give him deposits to order a V3 and they don't have any more information than you! There is a big demand for this type of camper, however it takes huge amounts of time and effort to develop properly. XPC is currently in the process of expanding their facilities, buying equipment, hiring more workers and building presold V1 and V3 campers. Everything is being done in-house (flatbeds, vehicle mods, fiberglass, woodwork, upholstery, finishing, etc.). It does not leave much time for developing new models. Trust me when I say it will be worth the wait, but don't expect much info prior to 2015.

Well, if, or when, I purchase an XP-Anything (or any other brand) I would want a well designed top quality product that would serve me well, long term, including systems.
Of course, I would wish/want/hope Marc and the company would do well after completion of my purchase, but I don't see it as an absolutely shattering event if the company tanked. The camper/product I purchased at that point MIGHT go up in value, because no more would roll off the factory floor. It happens occasionally.
Just a different view.
What I would NOT want is the/any company to go TU with my deposit $$ in their pocket. That is where having the deposit in an escrow acct protects the buyer until delivery of the agreed upon product has been performed.

Of course XP is still producing V1 campers as well (about one XPC V1 camper every 10 days):
