Width of Rim for STA Superlugs?

Does anybody have experience mounting these tires?

I cannot find 16x6.5" wide rims with my bolt pattern (5x5) ANYWHERE, except a Canadian site. I am wondering if I can get away with using a 7" wide rim instead? The only vehicle that comes OEM with this wheel size is a Town and Country mini van.. and those aren't exactly the wheels I want on my offroad trailer.

You'll be fine. The measurements in that chart are directly related to the rim the tire is mounted on, so the rim measurement is included. Its not a specific requirement.
