Need advice on a build

Hey everyone, I’m looking to “build” the ultimate road trip vehicle for my young family. I want it to have 4x4 capabilities, but don’t need it to do anything too extreme. I want it to be able to pull a moderate to light weight travel trailer and potentially be our one or two day camp when not pulling a camper. I need it to have space for at least 2 adults, a newborn, *(eventually another child) and our very large dog. We have kayaks and bikes that we will want to take on some of our trips. I’m looking for something a little different than the traditional E350. I think the Transit passenger only comes in a v6, but am not certain. I’ve also seen the Nissan NV and think that’s an interest platform. I recently read the NV has an optional v8 and/or a diesel. I’m interested in gathering thoughts and ideas, as I’m pretty new to the world. I also am looking at building a Tacoma as an actual “Overlanding” vehicle.

You'll probably want to look at a Quigley conversion (they convert Transits and NVs) if not a Sprinter 4wd. The NV is available with the 5.6L (this engine appears to be used for the Quigley conversion examples) but the turbo-diesels in the Transit and Sprinter would also likely do what you want. The gasoline 3.5 Ecoboost in the Transit is also not to be overlooked--it has more output than many V8s.
