I went a different way and made a hanging table. I like it because it is extremely stable, can be leveled easily if you use staps, and can be set to nearly any height. Mine stores super nicely in my Habitat, the walls have rug material which sticks to Velcro extremely well. I put 2 strips of industrial Velcro and it stays firmly in place.

Thanks for the inspiration - Here's my version with credit to you for the idea! 20"x48" 1/2" birch ply with aluminum channel to stiffen it, 1" nylon webbing with recycled backpack strap adjusters to adjust height or level the table regardless of the trucks position. Fits neatly in front of my bed box and sets up in seconds with to carabiners.
