One thing that stuck with me was when you said that, "I always try to spend a bit of money in any communities I pass through."
In the U.S., we're finding that cyclists are THE best resource for rural communities for exactly the reasons you described. While it's super easy to pass by a small town and drive to the next stop 200 miles away, cyclists are going to stop every so often for a snack, coffee or meal.
The rural communities that attract cyclists are doing much better than those that don't.
