I think with that kind of fabrication skill you should really, really seriously look into making an "expedition dashboard" for older Defenders (especially my 1997 300Tdi 110... wink wink) because the stock one is just idiotic at best. I would love a robust, functional item to replace the stupid...

Quality looks good to me. I like the aluminum grille for example since the stock plastic one goes to **** and looks tattered, but 440 bucks? I'd really need some sort of dual purpose for it... (but should still be aesthetically pleasing)

Slightly nitpicking here now, but the Defender does have a locking differential, in the transfercase. But that's just due to the full-time AWD system. None in axles.

Rest Of the World spec Defenders did indeed have 300Tdi engines until 2006/2007. Normal production ended around '98, because the 300Tdi no longer met the new stricter Euro emission standards.
