The pinnacle of perfect truck to me is an 01-04 Tundra SR5 long bed, reg cab, 4x4 v8, automatic, in white. I had one with 330k on it. It’s the only vehicle in a long list that I regret selling.

ARB is the only solid choice IMO. Had one on my ‘10 Tundra and it was a beefcake. Rated to 15k lbs if I recall, and they have better frame reinforcement than any other bumper manufacturer.

You'll get terrible mileage towing in any vehicle at real highway speeds (70-80MPH). In the video they are clearly doign ~75 MPH. 12.4 MPG is better than I would expect. 24.2 MPG is also higher than I would expect, not towing, even with an I4. 4 cylinder or not, it's still shaped like a brick.

An '08 Tundra should have zero problems towing a 3000 lb trailer if it's set up right. Mainly just needs to be level. If your bed sags, get airbags. Either way, get used to slower driving. Towing ANYTHING sucks, and will consume gas at a much higher rate than you're used to.
