My '14 Forester Limited CVT has the paddle shifters witch are great for grade shifting
i put on a curt hitch use it for the occasional trip with a small open top uhaul
you can feel the trailer back there but as long as you stay in the weight limits you wont have any issues
The Outback has the higher tow rating if that's a concern I just got a Forester I love the space and seating position..Gas mileage has been great so far comeing from a 2015 Hemi Ram

Look into some Airlift 1000 air springs had them in my Ram they were great not sure how they work with a lift

http://www.xkjeeps.com. You want a 2008+ for the updated 4.7 or 2009 for the updated hemi
The older 4.7 had sludge buildup problems without maintenance

Do you have a link to the engine changes over the years? all i found was https://en.wikipedia.org/wiki/Ford_Modular_engine no mention of 2011 changes for the 5.4
