We have a Columbus rooftop tent (from Autohome) that uses gas struts with a screw-wheel that you can tighten to keep it from collapsing in the wind. I don't think we've ever used them, but something similar could work for you, perhaps.

If I had designed it, I would have made the storage for the tabletop fit into the depression on top, rather than sticking out the back. Better still, as someone said, make it permanent. No real need to detach/fold it since the rest isn't going to collapse or fold up.

We're using plastic stuff from target -- we bought sets of 4 bowls/cups/plates/etc. for like $0.50 per set on clearance when they were closing out the summer stuff. Mostly, I'm cheap. Otherwise, I'd have melamine plates/etc. also from target.

Here's a thought... what if you put a small cabinet across from the door, up against the opposite wall? From the front of the bed to where the wall starts angling inward, and the same height as the bed. It wouldn't take up an excessive amount of space and would offer some serious benefits...
