Any previous experience with gluing the whole floor structure down? Could vehicle flex put stress on it? Though it's almost another structural member now (wall-to-wall 1/2" Baltic)!
I'm pretty sure that 2000 v10 chateau lives near me (in Louisville). I talked with the owner briefly just last week as we were walking by (him poking around under the hood).

I really like the ceiling panels as is. I'd clear coat them, but that's me. A light colored wood ceiling would be nice and bright and add some visual warmth.
I'm know you have your materials selected already though. It will be sweet upholstered too.

I have a Ikea bed frame that I modified for our first bed setup. It is shortened (73.5" long) and lifted (20" of clearance underneath, big totes are ~17.5" tall), original full size width (56.25"). This fits a full size mattress with no frame sticking out of the ends.

It does well for a big ass van. Lockers would be cool, but it gets around on it's own pretty well.
Not that Engineer is a 'difficult' route, but our Sprinter did it with no drama at all. (one of many places we've taken our van around CO and WY).
