Here's the 'set screw' that I used. A weld stud threaded from inside the tubing. I almost did a 1/2" sized bolt with an attached knob but I found these in a bin somewhere.
I didn't use seamless tubing. I think it's more expensive and not as available. I don't know much about actuators but I think they're the way to go if you have power.

I'd be hesitant to use aluminum for the telescoping portion because of its softness. But I'd definitely use aluminum for the top tent platform, which I didn't do.

Good to know. I'll only be powering the fridge this way while driving so it'll have the extra voltage from the alternator. Hopefully the voltage drop over the distance won't be significant enough to require a boost/buck converter.
